Braised Beef & Pappardelle

Recipe
Ingredients: 
 
About 800gr Beef chunk (membrane removed)
500 gr Egg Pappardelle
1 onion chopped
2 carrots chopped
2 celery chopped
3 large garlics crushed
2 Tbsp Olive Oil
1 Tbsp butter
A few sprigs of fresh thyme
2-3 bay leaves
2 cups red wine
2 Tbsp tomato paste
28 ounces @mutti_canada sauce (get the puréed one)
1 1/2 cups beef stock
Fresh parsley 
 
How To:
 
 1. Preheat oven on convention at 325
 
2. In a dutch @lecreusetcanada pot, melt the butter and olive oil on high and seer your meat on both sides. Make sure to salt generously. This step is very important as it will create a crust.
 
3. Remove from pot and set aside.
 
4. Throw in your veggies, season with salt & pepper and cook on medium for about 8 min.
 
5. Add the tomato paste and cook for another 2-3 min until dissolved.
 
6. Add the wine, chicken stock, tomatoes, bay leaves and thyme.
 
7. Cut your meat in chunks and place back in pot. Cover and cook for 2 hours.
 
8. After 2 hours; remove the meat and shred it with fork and knife.
 
9. Place back in pot and cook on medium for about 15 min. 
 
10. Remove thyme sprigs and bay leaves.
 
11. Boil your water; cook pasta. Once al dente, transfer to the sauce and stir cooking and blending well for 1-2 min.
 
12. Serve with sprinkled fresh parsley and Parmigiano.
