Pennette with Alici & Tomatoes

I just made this up. And it’s amazing.. I used gluten free pee pennette; wonderful.
 
Ingredients: 
(Serves 4)

450 gr Pennette pasta choice
6-8 anchovies with 3 Tbsp of its oil
1 large container Cherry tomatoes whole
3 cloves garlic, mashed
1 container organic spinach
A huge handful of basil
1 cup white wine
Salt
1 large cup of Parmigiano reggiano
Chilly flakes optional
 
How To: 
 
1. Bring pot to a boil. In a separate large pan, add the anchovies and their oil on medium heat and cook for 3-5 min.
 
2. Add tomatoes and stir cooking for 5 min. Add 1 cup of pasta water and cover: let it cook another 5.
 
3. Remove lid. Add white wine and let evaporate. (About 2 min). Then add basil and spinach stirring until well combined: it will reduce.
 
4. Add pasta in when ready, with Parmigiano.. stir and cook on medium low for 5 min. Serve.
