Summer Mint Potato Salad

Recipe
Serves 4-6 People

Ingredients:
8 Medium Golden Potatoes, cut in large chunks – skin on
2 Small Garlic Cloves, thinly sliced
½ Cup Good Quality Extra Virgin Olive Oil
2 Tbsp minced fresh mint
Coarse Salt & Pepper to taste

How To:
1. Cut your potatoes in large chunks. Boil your potato’s for about 10-12 min or until they are cooked.
(test with a knife – should easily cut through but not enough that they can be mashed)

2. In a nice service bowl, combine your ingredients. Drain your potatoes and throw them in the
mixture. Stir and serve.

My mother was all about simplicity and this was one of her go-to’s. The key ingredient is the mint and it does
all the difference bringing summer freshness. I suggest making this ahead so it has time to infuse properly.
