Brussel Sprouts with Pancetta & Maple Syrup

Ingredients:
(Serves 8-10)

2 containers of baby brussels sprouts cut in half (about 2 ½ lbs)
Salt & Freshly Ground Pepper
1 Cup pancetta
2 medium shallots, minced
1 Cup dry white wine
½ Cup of maple syrup
Salt & Pepper
 
How To: 
 
1. Preheat a large pan on medium high. Throw your pancetta and allow the juices to release stirring, about 3 minutes.
 
2. Once the pancetta is browned, stir in the shallots. Cook another 3 minutes.

3. Then add your brussels sprouts, stir and ensure they are all coated. Cook another 2 minutes.

4. Add the wine, let is evaporate (1 minute).

5. Reduce heat to low and cover. Cook for 10-15 minutes.

6. You want them a little roasted. Shut the heat, then add your Maple Syrup. Stir and ensure it is all
mixed (do not cook your maple syrup.

7. Serve on a fancy dish (why not). Season with Salt & coarse Black Pepper.
 
*Add some spice to it or dried cranberries.
