My Famous Lemon Rice

This has been my go-to for over 10-years now and I can guarantee you that it never disappoints. It all lies in its simplicity and simple process and the key here is to have good quality ingredients on hand.
Ingredients:
(Serves 6-8)
2 cups Basmati Rice
4 Cups low sodium Chicken Stock)
Extra Virgin Olive Oil
Sea Salt and Pepper
1 Lemon cut in wedges

How To:
1. Rince your rice. Drain.

2. On medium high heat, toast your rice stirring. Once you see the rice getting some color, add the rice, stir. Then add the stock, lemon wedges and season.
3. Bring to a boil, then lower heat to low, cover and cook for 15-20 min. When ready, remove from heat, remove the lemons and fluff the rice. Let stand for another 5 min.
4. Drizzle with with good quality extra virgin olive oil (add parsley or any herbs if you wish), and serve.
