Pumpkin Side Mash

This is a wonderful side dish that will make you look nice and fancy with minimal effort. The added value is that it is loaded with antioxidants and a great replacement to mashed potatoes. Go ahead and add the *options* if you want to add some sparkle to the dish for a festive occasion.
(Serves 4-6)
1 Large can E.D Smith Pumpkin Puree
1 ½ tsp Organic Cumin Powder
1 tsp Organic Garlic Powder
2 Tbsp Avocado Oil
¼ Cup Roasted Pine Nuts
Coarse Sea Salt (to sprinkle at the end)
Fresh Italian Flat Leaf Parsley
About 2 Tbsp Extra Virgin Olive Oil
*Optional for special occasion:
Add ¼ Cup Maple Syrup to the Pumpkin Puree when adding the Spices.
Sprinkle ¼ Cup Pomegranate
Sprinkle ¼ Cup Bacon Bits vs the coarse Sea Salt
How To:
1. In a Medium Pot on medium heat, add the Avocado Oil, then add the Pumpkin Puree.
2. Add the Cumin and Garlic Powder, stir. Let flavors combine, about 5 min.
3. In a separate small pan, roast the pinenuts.
4. Prepare your dish. Lather the Pumpkin Puree, sprinkle coarse sea salt, parsley, pine nuts & extra virgin olive oil.
