Side of Cream of Cauliflower
Recipe
Ingredients:
(Serves 4)
1 Large Cauliflower, chopped in chunks
1 medium white onion, chopped
1 garlic
¼ cup whole milk
2 Tbsp butter
A small bushel of thyme
2 Tbsp chopped pistacchio
Salt & Pepper to taste
*Drizzle good quality Extra Virgin Olive Oil
How To:
1. In a medium saucepan, add the chopped cauliflower, onion, garlic and add enough water to almost cover them (do not over flood – it is ok if some pieces are not emerged). Add the thyme, season with salt and pepper, bring to a boil. Reduce heat to medium high, cover and cook for 12-15 min.
2. Discard the thyme. Add the milk and blend until creamy. Add the butter and stir (check seasoning)
3. Lather in a serving dish, sprinkle the chopped pistachio and parsley, then drizzle the extra virgin olive oil.
